I'm a newbie and need help. I'm using Coral Draw X5 and Sign Cut Pro with a Vinyl plotter and Im trying to import files into X5 and export them to Sign Cut. Which file formats should should I be using?

If I recall SignCut uses .ai format.
It should have a plugin that transfers the file automatically. Exports settings are based on your last used ai export settiing.
Press your application launcher to see the plugin.

The file formats for importing files into DRAW can be seen (and selected) from the Import Dialog when you go to menu:File->Import... Look at the lower right corner of the pop-up and you will see a drop-down box that allows you to select the file type for importing. Scan through this and choose which one you wish to use for importing the file. If the file type that you are looking for is not listed, then you should have the file (to be imported) changed to a compatible file type.
The same could apply to your Sign Cut program. If you wish to transfer files between the two programs, examine both of the programs Import/Export file types and choose one that is compatible to both. If Sign Cut Pro support CMX for Presentations 5.0 (which many other vinyl cutting programs do) and no AI (or AI older than AI ver. 7), then I suggest that as the most compatible file exchange format.
