I have a text in my .cdr file. I use the CMYK color mode. The text I have is 0% Cyan, 0% Magenta, 0% Yellow and 100% Key.
I publish the .cdr file to pdf, with these color settings:
Then I open the .pdf file in Adobe Acrobat. I go to Tools->Output preview to see the color separation. I choose Eurostyle Coated v2 from the combobox. The I turn the checkbox with Yellow on, and the other checkboxes (for the other colors) off. The problem is, I can see the text, even though Corel Draw says it doesn't have yellow in it.
Why is this happening? How can I fix it?
Btw my file is for making an offset plate, I don't know if that's relevant to the question.
You are making Acrobat do a color conversion by choosing a different output intent than it is in CorelDraw. You're likely gonna get CMY in with the K.
You can do the color conversion in Acrobat and preserve the K, but not simply by choosing an output condition in the Output Preview window.
If you want the Eurostyle Coated v2 to be the output intent, set up CD to use it by default instead of US Web Coated (SWOP) v2.

Are you in the USA? Outside the USA?
In the USA, embed the US SWOP profile like you show in your first screen shot...and don't change it in Acrobat.
Outside the USA, if you need the Euroscale Coated v2 profile, or if you are in the USA and are having this printed outside the USA and need the Eurostyle Coated v2 profile, change the document color set up to be using the Euroscale Coated v2 profile, and embed it.
For just changing the document color set up, Tools | Color Management | Document Color Settings. In the drop down for the CMYK, assign the desired profile. Publish to PDF. The proper profile will be shown in Acrobat.
Now, if you are still getting CMY in the 100% black, something is wrong in either the black assignment/swatch for the elements or whatever. But CD does output properly using the various profiles.
If you always need the Euroscale profile, you can change the default. Tools | Color Management | Default Settings.

Text which is 100%K color turns into all 4 colors when I publish to pdf from Corel Draw. How do I fix that?
What PDF profile are you using? PDF/X-1a with a proper profile shouldn't ever do this.
What is the color space you are working in?
What color profile is your color management set to?
What PDF type are you exporting?
Does a brand new document export 100% K as a mix also? If so, please upload a simple sample.
If a new document works properly, compare its color settings and PDF settings with the document that is not working as expected.
