The Document Color Palette is a great time saving tool.  If it isn't already in your work space you can enable it by going to: Window > Color Palette > then ticking the checkbox for Document Palette.  You can turn the ability to automatically update the colors in the palette on or off.  If you disable the automatic update, you can still add colors to the Document palette by either dragging an object down to the palette, or by dragging a color on to it from any other open color palettes. These can then be quickly accessed again during the design process.
