How to convert all RGB images in CMYK in a multipage document??

the first point is Why do you want to convert all bitmaps to CMYK automatically. I suppose that it was for send to print. On this caso, you don't need to convert to CMYK on the document, just Publish as PDF and choose this option (that it was included by default on some presets such as PDF X/3), btw if you convert to CMYK all bitmaps (using a macro or publishing as PDF) you don't have control to the result. it's supposed that you should use an image editor (such as Corel PhotoPaint or PaintShopPro) for adjust images. If you convert to CMYK inside CorelDRAW, one of the most important things is to use an appropiate color profile before convert to CMYK.

What profile is being used by Photopaint when the "Convert to CMYK -- " command is used. Do I have any control over the profile.
How about conversions back and forth which include Lab. I always use Lab for retouching.
So far, I haven't noticed any shift in color on the monitor when converting back and forth between RGB, CMYK, and Lab. Would shifts in color show up if this went to an offset press or an ink jet printer.

You're using the settings on use under Tools/Color managemnet (both general settings and document settings). Same as CorelDRAW.
