I am trying to find out the best way to remove the sky from the background here (Including all of the little spaces between tree branches)
The Cutout Lab doesn't seem to work for how intricate the selections are. All help is appreciated!

Thank you Jeff. The issue I'm having is "Selecting" all of the small spaces between the leaves and branches. What tool is best to do this? If I use the magic wand, I have to select each little area. This photo is just one example but others I have are more complex. - Any help is appreciated.
Yes, this is more of an advanced technique as you've discovered. There are a few strategies. Maybe I should make a video tutorial on it. I found a novel technique many years back, I need to find it again. I think it showed channel masking or luminance masking.
For your example though, I used the Magic Wand tool and "Select Similar" mask function., and played with feathering on the leaves area only. Then I tried something new - using a merge mode to take away the final bits of white fringing around the leaves.
I did this with the Color Mask in 4 clicks (blue sky, plus three cloud areas) then a quick clean-up of where the mask had been applied to parts of the buildings. Last step was just to do Mask Outline > Feather 2px as the color mask doesn't have any anti-aliasing or feather settings.
