How to create a gradient fill on a curve like below:
You can try converting the curve to an object... select the curve(s) and hit CTRL+SHIFT+Q
If I choose the fountain angle to be 90 deg or 180 deg, the gradient line doesn't follow the curve.

with the moire patterns in that image, it looks like a blend between lines for part of it. Then you can apply interactive transp. to a blend group.
The two curves on top look like a blend just like you suggested, but the bottom two do not show the moire pattern.
By using blend, I can produce the first sample that I would like to achieve, i.e. fill perpendicular to the curve, but not the second where it fills along the curve.

increase the blend steps and or outline width on those blends and zoom in... there should be no gaps
