Hi,
Can I round corners of freely joined curves with the shape tool in a similar way to drawing solid shapes and dragging fillets(with the shape tool) on them?

No, you have to use the Fillet/Scallop/Chamfer Docker. Use the shape tool to select the nodes you want to round then make your settings in the docker. Once you do it you can't go back later and change it.
