I think I did something unintentionally awhile back so that now every time I group or ungroup objects on a layer, the layer they are in collapses. For the life of me, I can't find anything on what keystroke I may have done (if it was a keystroke) that resulted in this happening. It's not a critical thing, other than being annoying.

Are you referring to the little "+" sign in the "object properties" docker window? Have you clicked it? I am not sure either exactly what you are referring too.
It is related to the Object Properties docker, but not a simple matter of the "+".
If I have the layer expanded so I can see all the objects in the layer (i.e., it's a "-" sign), then perform a group operation of objects on that layer, the layer just collapses so that in order to do anything else in that layer (so now there is a "+" sign), I have to expand it to see the objects and/or groups in that layer. I hope that's clearer.
As mentioned in the OP, it's not a huge deal, other than an extra step that I never remember happening before.

On my system if i select all objects on the layer and group them, it collapses the layer. If I ungroup them it expands the layer.
IF I select some objects on a layer, it collapses only those objects into a group. If I ungroup them it re-expands everything.
I can't reproduces what you have written.

You haven't by chance disable the layer or adversely introduced a second layer

I have just tried grouping 2 objects on 1 layer and they Automatically become 1 group of 2 objects and the + sign showing this is correct as they are now 1 grouped of 2 object.
In the object Manager Docker if I click on the + sign it will tell you Group of 2 objects and below this it will show the 2 objects.
If I click on either object from the object Docker that object can be moved or changed.
If I click on either object on the page both objects will be selected because they are grouped
If I make a new layer 2 and draw a object number 3 on that layer then select the 3 objects and group them all
First they will all move to layer 1 as a group of 2 objects consisting of the first 2 objects as object 1 and the number 3 object as number 2 object.
I can still select each object from the Docker with the + changed to - sign
I do most of my selections from the Docker and Right click on the group name to ungroup.
Their is a lot of different moves and changes by right clicking on any object or group.
If I have a big file with a lot of objects I name each object to help in selection
