when working on a catalogue, for example, with many individual photos, how do you import them so that I don't end up with files 500Mb-1Gb large?

This is a different issue (the original post is about import, not export).
A CMYK image should be bigger than RGB (4 channels instead 3) btw the file size is also relative to the compress ratio. JPG could be fine for send to plotter but not as a high quality printing output (offset printing) such as brochures, catalogues, magazines, etc.
