If I select a portion of an image, then turn on the Mask Overlay, I can use the Brush Mask tool to "paint" over additional areas I want to mask. How do I unmask areas with the same ease?

Can't be done.The mask overlay is now only for display of the mask.At one time you could add or subtract from the mask by painting with white or black.

When the Brush Mask tool is selected, you should see the "modes" your can use on its Property bar. Normal (arrow), Additive(+), Subtractive (-) and Overlap. What you want is Subtractive mode.
