What bleed does you printer recommend?
I would look at Facing pages
Bleed you can set up on Layout - Page size - Bleed or when file published to PDF (PDF settings - Prepress - Bleed Limit

Yes, Mek has right, the first step is to setup your work correctly.
Create a new document, and double-click on the page border to go directly to Options/Document/Page Size. Choose twice of the finished page. For example, if you're working on a magazine of 19x27 cm each page, choose 38(=19x2) x 27 cm, the size of two pages. Also you can choose Bleed on the same window. Then, go to "Layout", and choose the appropriate option for your works. if it's a magazine, "booklet" can be the best option. Don't miss to activate "facing pages". Ready.
Now, you should have one page with 19x27 cm or the size you want. Add more pages. The first and last page will be alone 8as a closed book or magazine) but you will see the pages 2 and 3, 4 and 5, etc. Them you can add an image or text across the pages. When you Publish as PDF or print, the program will automatically crop the image. Never do it manually, please.

Right. Between pages there's no need any margin, it will automatically placed with any imposition software (such as Kodak Preps, Heidelberg Metadimension or Fuji XMF). Don't add any extra margin between pages. Add external bleed, and if you ahve a background or any image that fit on the page border, you need to enlarge it in order to exceed the page border. That's the "bleed". 3 mm of bleed is enough for any printer.
