Here's something I find baffling.
The differences between 1.jpg and 2.jpg is that the latter is stripped of EXIF data and the file size is obviously smaller.
Useful to know if you want to keep the EXIF data with the .jpg (or not). Is there a simple explanation for this?
As I read your bullet list, 1.jpg is effectively created from the original jpg (using its EXIF data) despite the fact that you have saved it as a cpt whereas 2.jpg is created from the cpt (which, of course, has no EXIF data).

Actually, I came across this oddity because I wanted to lose the EXIF data. I didn't understand why some files retained it and some didn't, even though I was apparently going through the same process.
I agree with Roy's plea - "Save, Export and particularly Export for Web should give the option to keep or delete metadata". That would save the hassle of having to strip the data out after exporting the modified file. Of course, as saving as .cpt loses the data (on re-open) then I can see why not, but it could be there for the first save.
By the way, the online Help on EXIF is lamentable!
If you ever do want to lose the EXIF data then Copy the image and Paste as New from Clipboard (Ctrl+Shft+N) will work. Quicker than saving as CPT and re-opening.
ExifToolGui can be useful if you want to copy back data from one file to another or manipulate the EXIF data.

Thanks for that, Mek. I'm aware there are a number of ways to get rid of the EXIF data in a file, but that's not my irk. The irk is that when I Export for Web from a CPT that has not been closed and reopened, it still saves the file with the EXIF data intact, making Export for Web pointless (see sunnybrook's reply). Hence my agreement with Roy for a 'Save EXIF data" tick box (or similar) on Export/Save, or a proper full dialogue for editing/deleting EXIF data in Tools.
