Is there a way to have the pen stroke have one end pointed? I have tried one of the pointed end caps, but it looks funky.

You can try calligraphy, brushes, or (my favorite) draw the line as a shape with the Bezier tool. (i rarely use the brush tool because I end up reshaping it and it's faster to just draw it...)
Or, have you tried this....
Sorry, I should have been more specific abouit what I'm trying to create. I'm doing some realistic hair. I've made individual strands before and copied and pasted them. This is too time consuming. I'm getting better at hair but it's still a pain.
