Say I draw each line separate, so 3 lines total, is there a way to assign the bottom line of the i a certain degree from the other two, similar to almost a v? See drawing below!! Is this something I can draw up with the correct degree of the line? Thank you!

Some time ago I tried to design custom fonts for one of my projects and had to read review about these features. So here's a possible answer: with your pointer in its intended "zero" place, draw a circle centred on the pointer's rotation point. Give it no fill and no outline, so that it doesn't print.
Group the two objects, which should show 0 degrees rotation for the group. You can then rotate the group rather than just the pointer and I think it will then show the angle you want it to.
