Hello!
I saved a file made in X7 as X5, and when I reopened, the gradients were converted to bitmaps and some of the text were converted to curves.
Is there a way to prevent that from happening? I'd like to keep it editable.

Save your CDR as current version only - since new features are added over time that are not compatible with older versions. If you need to down-save, be aware that coreldraw might change things to be non-editable.
Under Tools/options/workspace/save you will see the options for downsave as older version. If you choose "keep editable" some things could change, since text, gradients and other effects are different and improved on X7
The best sugegstion is to keep the X7 version and save as X5 with a different file name
