Every time I start a new document, it has 4 pages and is landscape orientation. I don't remember setting this up that way, but how do I get it back to a single page and portrait orientation?
I'm sure I know this but it has completely escaped me. Thank you for your assistance.
Try
CTRL+ J corel draw options
Show new document dialog box - OK
then
CTRL + N (start a new document - set up page number and oriantation)

Thank you @Mek but I'm not following this. I opened the Options window (Control+J) and is that where I should find the the New Document Dialog box? Where then?

check this to on then close. Ctrl+n. Set all you parameters and then check don't show again.
You can create a new document using "new from template", using a .CDT or .CDR file as the basis for the newly-created file.
That is a great way to consistently get what you want when starting a new document, and it continues to work reliably even if you change CorelDRAW workspaces, install a new version, move to a different machine, etc.
