When I click on PRINT, there is no color tab. What’s the deal? Am I missing something?

What printer are you using? What version of CorelDRAW? (the Standard CorelDRAW Graphic Suite, CorelDRAW Technical Suite, or the Home&Student version?). Remember that the Home&Student doen't include all the features since it's supposed that it's not use for work, only for practice
The Pantone colors of the palette should have a white dot,. that indicates it's a spot colors. According with your image, your'e not using Pantone Spot colors.

1 - Your files doesn't have any Pantone color. All objects are CMYK
2 - Your Document Palette include several custom Spot colors , but those colors were not applied to any object
3 - if you select any object and apply one of the colors of the Document palette, when you send to Prnt Separations, this color is included on the list as a color separation
