Is it possible in Corel to convert an image like this:
Into a simple line art image like this:
So I can then get it engraved.

I don't think, one can do it automatically. not just in Corel, no other software could do it in my opinion.
Have you tried Bitmap>Trace? You may want to clean-up you photo a bit first... but give it a try and see what happens.
Personally, I think you'd be better off redrawing on your own than with an automatic tracing tool. It'll be faster.
Tetrodesign is probably right... but if someone knew what they were doing and took their time, I bet they could figure out a way. Good luck Martyn.
There are no automatic way to do this unless you get it redrawn by artist.
